Our chef is a Norman at heart but has chosen the Landes for his profession.
After taking his first steps in the restaurants “La Marine” and “Château de Sully” in Normandy, both of which can boast stars, Nicolas MAHIEU packed up and headed to the south west, and the Thalassa Miramar Sofitel in Biarritz, where Patrice DEMANGEL introduced him to the splendid products of the Basque country and the ocean.
He later joined Philippe LAFARGUE, still in Biarritz in his concept restaurant where he discovered a highly artistic and modern art of cooking. He then went on to a world of luxury with Alain DUCASSE in Paris.
He was appointed Sub-chef and rapidly took over the kitchens of the BAYA Hotel & Spa in April 2009, with the unfailing desire to flatter diners with contemporary dishes using fresh regional produce.
